Buttermilk Waffles

Just realized I have a waffle iron in the cupboard I have only used once or twice the whole time we have been married. For shame! They sounded extra good to me (must be the pregnant thing) So I found a good recipe and whipped out a batch. Thought I would share:

Buttermilk Waffles:
2 eggs
2 C buttermilk
2 C flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 C butter (melted)

In a bowl beat eggs. Add buttermilk, flour, baking powder, baking soda, salt , and melted butter and beat until smooth.  Pour batter from cup onto center of waffle iron. Cook 2 to 3 minutes or until golden brown.  Top with syrup, strawberries, whipped cream or ice cream as desired.


I also folded1/2 Cup frozen raspberries into mine. Mmmmm!
